Great points for creating an IoT connected prototype
Should focus on water source as you cannot track water consumed without doing so.
The app with alerts and notices is a distraction. Focus on the detection, collection of data, and showing the cost to the consumer.
Create the next prototype. Start working on your BOM. Set the target BoM price.

It is a very real business use case that large companies like CapGemini are resolving for SmartGrid energy service providers, but there isn't much in the way of smart-faucet, consumer-engagement systems and tools. ++good

Why down the drain not upstream at the faucet? Who buys it? who installs it? why not update existing water meaters? Tech is OK, needs business side, use case.
Also, do not waste water during the demo.

The thing was made with toothpicks and saran wrap. You can make it for 0-$2. It can be modified and inserted into anything where water flows. It measures the cost and quantity of water to the cent!

Thanks for your comment. The objective was to make a plug and play kind of thing which does not require the customer to do minimal to no installing. Will keep your suggestions in mind for future prototypes

Not sure why/how someone will use this. Not that it's a bad idea but you should start more with what the individual's personal use case would be.

Thanks for your feedback. A customer would buy this to be able to be better informed about where he can cut down on water usage at a household to help conserve more water.
